Re: Looking For Fairly Cheap/Easy Vegetable Dishes

Hmmm. Sure, some vegetables have a shorter shelf-life than others, but in general if your vegetables are going bad within 2-3 days, I'd either look to buying them elsewhere or checking to see if your fridge setting needs to be colder, whether you're storing them properly, etc. Green cabbage should last for some time, assuming it's kept cold and dry. Ditto carrots. Broccoli isn't quite as long-lasting, but should still be good for more than 3 days, if stored properly. Bell peppers, too.

There's also frozen and canned, which aren't optimal but expands one's options.

I forgot - brussel sprouts also last a good while and they're excellent roasted.

yes this. I've kept cabbage in my fridge for 3 weeks without it going bad; carrots and celery last until I finally use them up. If your veg is going bad in less than a week it might be a storage problem, but don't discount the buying factor. If it's universal across all types of vegetables - peppers, carrots, leafy greens, root veg, etc - it might be your fridge, if it's one or two types consistently but other types seem to be fine, it might be the grocery store supplier.
