I just kept walking outside of the main storyline, I just kept walking until I bumped into a village or a shrine or a labyrinth.

I went towards the nearest shrine on the map, then the nearest shrine to that, and the nearest shrine to that, and so on. Gotta have those fast-travel spots.

This is how I tend to play in open-world games, just to see if I can get something I'll need or want later on. But phrased like this it is also a disconcertingly apt metaphor about my goal-setting irl.

I haven't played this but this is generally my problem with open-world games. I always feel like games are going to punish me if I go in the wrong order or do something the wrong way.

What is great about open world games is that you absolutely cannot go in a wrong direction or do anything in the wrong order. OWG don't punish the player for creating their own unique playthrough.

That being said, I agree with OP here. I can't get into this game simply because it's just too open world for me.

This is why I haven't gone back to RDR2, which I've had for over a year now. I enjoyed what little I played, but I'm not smart enough to figure out what I'm supposed to do, and it does feel more overwhelming than fun after a while.

this is how I felt about link between worlds; there is no order to get tools to access dungeons because you just rent them, and I need a bit of structure in a zelda game

I mean, you can pretty much just follow the main quest? It tells you exactly what to do. Everything else is optional.

Once you're off the plateau the game stops pretending it gave af about the story. Everything is optional except killing Ganon. It was ok the first time around, but I don't know if I'll ever pick it up again. It was also my least favorite incarnation of Zelda herself lol.
