Because farming involves a huge body of expert knowledge and the vast majority of people writing fanfiction don't live in rural environments

And...how is that different from any other AU about careers, cultural contexts and/or historical time periods that involve expert knowledge the vast majority of people writing fanfiction don't have personal experience with? Writers can simply do some "research" on Wikipedia, then handwave over the details just enough to tell the plot (or smut) they want to, like they do with everything else.

I genuinely think that most popular AUs do not involve a significant degree of unfamiliar expert knowledge

You either to read more AUs or just acknowledge that a farm AU isn't special in that regard either.

I mean, sure. We can have as many space travel, porn star, royalty, professional musician, body swap, time travel or (for some, just as unfamiliar) academia/barista/flower shop AUs, or my personally most hated popular trope, A/B/O AUs as we want. Unfortunately for fans of the extremely common farmhand kink, it is simply TOO TOUGH for fanfic authors (who, as we know from the regular censuses of fandom, are all urban elites who have never seen farm animals in their lives) to watch a video on YouTube or something in order to describe a hot character shearing a sheep with enough ~realistic accuracy to get readers’ nether bits tingling. Sorry, OP. (Yes, read this with the massive eye roll I intend.)
