I’ve never watched Evangelion or Cowboy Bepop or a bunch of other anime that are considered essential for viewing. None of them have sounded like fun to me.

I fell into the Doctor Who rabbit hole and managed to watch all the Classic episodes that weren’t missing last year ‘cause there was nothing else to do since we were on lockdown. I enjoyed most of them, but I’ll be forever sad that we’re missing so many episodes and the lousy animated reconstructions are poor substitutes.

Eh it's not that I wouldn't have watched them, and I did watch Cowboy Bebop when it made it onto Adult Swim - just in those days I was entirely dependent on what the video rental stores had. And then by the time most stuff was readily available online I was just like... meh... I don't have the time for picking up new things like I used to. Got my hands full with the fandoms I'm already in.

...Which, you know, is why I don't do the same thing with Doctor Who. I resisted writing Trek fic for the longest time specifically because even though I watched the movies and TNG and DS9 as a kid, I never got around to watching all of TOS until the mid '00s, and even after that, there's SO MUCH CANON I had to go over before I could have confidence doing anything in the fandom. (And honestly I still don't.) I don't know if I will ever have the patience to do that again.
