Many Chinese dishes use star anise and Sichuan pepper and I hate the former (to the point of the smell making me sick) and my tongue overreacts to the latter (if I wanted that sensation I'd suck a pack of batteries) so I don't want to use it. They are pretty essential in a lot of dishes though so I mostly end up cooking something different.

When brownie recipes call for any additional leavening, like baking powder or soda, I don't put any in because I like them fudgy.

In baking, I tend to substitute butter in for oil because of taste and texture. I sometimes substitute 2 to 4 tablespoons of light sour cream in instead of butter, to make it less calorific, but that really depends on what other flavors and textures are in the recipe and how butter-rich it is. I often put in less chocolate (or other) chips than the recipe calls for because I like a little more dough in proportion to chips.

I've never really amended recipes per se, I am not that confident in my cooking skills. But I can 100% admit that I have also never measured much in my life outside of baking which is more science than cooking.

The best garlic! So fucking annoying that it rarely shows up in the supermarkets too. You just have to grow your own if you want it here, which sucks because our climate zone is a bit variable for elephant garlic.

I replace some of the flour with cocoa powder in the old Joy of Cooking brownie and chocolate cake recipes I use.

I don't like the texture of mushrooms and will either use mushroom broth concentrate in place of salt in recipes that call for mushrooms, or just leave them out.

I’m all in favor of baking instead of frying wherever possible.

I’ve discovered that it’s an excellent way of making both bacon and spring rolls!

there was a kind of cookie I made that used dark chocolate, milk chocolate, white chocolate and peanut butter chips and the store had all the other kinds but not the peanut butter ones so I used butterscotch chips instead and I think they came out better that way (and no having to worry about anyone having peanut allergies!)
also I have occasionally made pumpkin cake with a little fresh ginger root grated fine because I didn't have any ginger powder.

People are really defensive towards them for some reason
