I'd much rather just stick to "I headcanon this because I like the story/it makes them more relatable to me/I find it comforting or cathartic or important to write about or read about or think about characters I like having similar experiences to me" and call it a day.

Yeah, this. I wouldn't have any problems with things like trans headcanons if it were just something like that. I have problems when it's stuff like "this female character is muscular and strong so she must really be AMAB" or "this male character has long hair and is kind of femme-presenting so he's a trans guy" because like you said, it plays right into stereotypes that affect real people and that's not cool.
