I do think there's a certain point after a character's conclusions strain credulity in the other direction, but I think "experience a ton of evidence" is making a lot of assumptions, and doing some heavy lifting. Like there's a whole genre of horror that's "it wasn't supernatural, it was a human being being particularly clever all along" or "it wasn't supernatural, you have a mental illness" so if characters have that in mind? *shrug*
