But I don't think Boba Fett has ever really been a deep character with a compelling and rich internal life. A huge amount of Boba Fett's character and appeal, from his first appearance, has come from the fact that he wears cool armor and has a cool ship.

Only if you don't consider that until recently there was a LOT of additional stories featuring Boba Fett and his compelling and rich internal life in Legends? There are plenty of books and comics about Boba Fett, which fans of the character didn't magically forget when Disney decanonized them.
