As someone who hasn't really followed the SW TV shows, I'm pretty bewildered why there's both a Mandalorian show and a separate Boba Fett show

It just seems like there would be a lot of overlap between the characters (since a huge part of what's distinctive about the characters is the armor that they wear) and the kinds of stories you can tell?

Not OP - I've done that because I wanted to write a story. I go back and read it sometimes. A few friends have read it, I guess. I have no feelings on OP or imagines but just saying drawer fic is fine and enough for some people

The Mandalorian is about a specific Mandalorian (Din) not just Mandalorians in general.

It is a bit like saying "Why would someone make two different shows about Yoda and Obi-Wan? They both where robes and have powers." I've not watched Boba Fett, but Din's story and trajectory is (and will be) far different from whatever Boba Fett is getting up to.
