I think someone on the writing staff said the Casita has soundproof walls for the bedrooms, or certain rooms. No doubt because they knew people would wonder what kinds of activities Dolores has heard her family get up to. Even if it wasn't official word, I'd imagine that's how it works, since Casita is at least somewhat sapient. So don't let that be a deterrent, we can assume Dolores is none the wiser about her uncle's masturbation habits.

Comment OP here and I hope thus is true, but all I have to go in from canon is that Dolores heard Luisa's eye twitching all night.

It's a kid's movie, I'm gonna go with Casita letting Dolores overhear into Luisa's room specifically to get the plot going, and normally she can't hear what her family's up to in private moments.

She also hears the rats having conversations in the walls...which was really Bruno.

I assumed this was "all night" as in the usual colloquial manner of meaning "during the party", not literally every hour of the sleeping-time that followed...
