I haven't watched any of the new shows yet (tho tbf that's mostly they're on that damn streaming service I can't get here and won't just for them alone, so...) but I've recently rewatched those movies and kind of fell back in love with them.
The writing was dodgy (I mean, we all know that STID was uhm, not good) but I really liked the chemistry of the cast - though I still wish they hadn't done the Spock/Uhura romance. I know many people actually like it but I'm salty that the only major female character had that one as her main "focus" for three movies straight (cause lbr apart from Kirk and Spock no one got any true storyline). Guess the third one at least tried?
Anyways, the movies - especially the first one - are a lot of fun and I do hope that they'll make a fourth one. There were some rumours, right? My brain didn't make those up?

And then I ordered the new-ish novels set in that timeline just to have *more* of them.

There are only two, right? I hope for more novels set in the AOS.

Yes, there are only two (+ the novelisations of the first two movies, which I, desperate as I was, bought too) and they've been written years ago and just got published now. The afterwords also implied that there were more planned and some were actually already partly written and then got re-written into other stories. It's quite sad.

IMDb indicates a fourth may happen.

If I recall correctly, a few years ago, they had an idea for a story with George Kirk (more time travel? alternate alternate universe?) and were in talks with Chris Hemsworth, but it fell apart. So, I guess they had to come up with a new story, or at least I don't think that's the direction they are going in anymore, also Beyond didn't do as well as they expected, so maybe they wanted to be sure another one would work. Anyway, it's listed as pre-production with Chris Pine, Zoe Saldana, Karl Urban, Simon Pegg, Zachary Quinto, John Cho and director Mark Shakman (WandaVision, It's Always Sunny in Philadelphia) attached.
