I'm curious to what you mean by this? I'm not sure I've ever seen (though I'm not much a fan either so I'm not sure how much my experience counts here;;) genderbending in fic where they aren't just genderbent to start with?
Hmm, then again now that I think about it that's not exactly right, since there are fandoms like Persona where it's like a status aliment where they switch genders for like 24h temporarily. But that probably isn't what you mean, maybe(?), since the characters themselves know it's only for a short period of time... or something. I'm guessing it's more of a fandom by paring basis at any rate.

There are plenty of fics (or at least there were in the 90s, boy am I dating myself) where a character would just Wake Up as the opposite sex. And after marveling at how sexy they were in the mirror, would immediately just think of themselves as the opposite gender. Like, Jim Kirk would just wake up one morning on the Enterprise in a female body and immediately start referring to himself as "she".

Huh, that's actually a really good example. I still can't say I've seen it done quite like that before, but I can absolutely imagine people jumping at the opportunity to use some surprise alien transformation to make Jim a girl for like so many different reasons. Probably some sort of mix of 'disguised' self-insert vs. make the pairing 'straighter' but not willing to commit to the details type of thing. (I can totally relate to the "OHMAIGAWD! I'm so /HAWT/!" sitch though, /that/ I've seen on more than a few occasions I have to say...)

But I absolutely agree that it's more than a little strange for a character to immediately adapt like that. Waking up in a completely different body, (genderbent or not tbph), would absolutely take a lot to get used to. Hell, just walking around or sitting down would be a shock with all that new equipment moving about! Especially when you take in other characters though, like Kirk being called 'Madam' or something of the sort in the lunch hall by some grunt trying to get his attention absolutely would not turn his head if only because he's lived his whole like never being called that before. Even the chillest character you could imagine would still need a double take with that bet.
