how is one to write a fantasy story centered around chinese female characters if they don't know anything about perceptions of femininity and gender from a chinese perspective?

I honestly don't see anything wrong with using historical or wuxia settings and tropes and putting your own spin on it... It's fantasy, not a realistic story about Chinese women set in modern China. And it doesn't sound like OP would go around claiming their novel is "culturally authentic" and being an authority on Chinese culture or something like that.
