Re: 15-20 minute weeknight meals

I like the Pro Home Cooks' channel's 15 Minute Dinners series:

I've personally adopted the Quesadillas into my rotation, which you can find in this^ video, plus the Lettuce Wraps from another of their 15 Min Dinners videos, and a Broccoli Rabe Pasta from a third 15 Min Dinners video.

I don't think any of them are actually 15 mins unless you're quite speedy (which I am not). Also, I guess they take longer for me because I make like 6 dinners worth at once, to keep me and my father fed for three nights. So maybe they ARE actually 15 minute dinners, if you're only making enough for one meal, lol.

The recipe says it takes 30 min, though, which is probably accurate. I use pre-cooked, frozen shrimp instead of raw chicken, so it's faster for me. If you wanted to make the same substitution, you could probably crank the dish out in around 20 minutes.

And okay, this is probably not appealing to most people, but I genuinely like Kraft Dinner Casserole: Cook a box of Mac & Cheese. Add a bunch of frozen peas when the noodles are nearly cooked. Drain. Mix in the cheese packet (and milk/butter if desired). Mix in a can of flaked tuna fish. Then mix in some grated cheese (or melt it on top, or both--both is good). You have to not hate peas and tuna-fish, obviously. But if you meet both of those requirements, then I swear it's actually good.
