vegetables you like to have with your dinner/meals?

Just curious - what vegetables do you have regularly with your meals?

I have lettuce with my sandwich or sliced cucumbers for lunch
And a rotation of sweetcorn, peas, broccoli and okra (mainly frozen or tinned) during the week depending what I've bought.

I eat thirteen portions a day. Most commonly tomatoes, cucumber, celery, carrot, onion, cabbage, broccoli, sweetcorn, peas, aubergine, courgette, and cauliflower. Potatoes are also frequent.

How? No seriously, how? How much food is that? Like, I eat maybe... twice a day and I'm trying to imagine THAT much food.

In cooked meals I almost always have zucchini and onions.

Raw (as a snack, in a salad, to dip or on sandwiches) it's always red bell peppers, usually with carrots as well.

bell peppers, cucumbers, tomatoes, onion are staples. do potatoes count? if yes, that as well. Also canned peas/carrots/beans

I do try to buy seasonally, so i have some variety and rotation - brokkoli, zucchini, pumpkin, fennel, leek, cauliflower.
Tomatoes are a year round guilty pleasure tho.

I'll put onions on everything. My favorite veggie. Bell pepper too. Either cooked or raw, don't care.

For sandwiches usually just onion, bell pepper, and pickle. Same for burger actually.

For veggies I serve with dinner, broccoli is frequent because I love it. green beans, asparagus, cauliflower, cabbage (any form), corn either from cob or can depending on time of year.

Do lentils and beans count as veggies? I eat those fairly frequently.

Ones I love but don't get often: baby corn, beets

Tomatoes, bell peppers, broccoli, green beans, and carrots; sometimes peas or corn or onions. Oh, also, brussels sprouts! I actually like them.

If cooked right, brussels sprouts are amazing. It is just that so many people cook them in a way that makes them soggy. But nice and crispy and they are delicious.

Carrots! I just love carrots. Cucumbers (fresh or pickled). Tomatoes in sauces.
I can't stand onions, as in my body can't really digest them, so it's a no. (and I hate how obsessed everyone with them. One of the reasons why I hate cooking). I don't know if avocado counts. But I really love avocados. Sadly I live in a wrong climate for them

There are very few things that I won't stack with onions or find an excuse to put onions in there. Even things like a cheese toastie as my weekend treat breakfast...yup onions are going in there.

When I was a kid I was obsessed with carrots. Still love them but they don't especially go with everything!

Broccoli, potato, carrots, corn, tomato, zucchini, cauliflower, squash, red & yellow bell pepper, onion, garlic. Fresh is best, either roasted or steamed.

Asparagus is my fave, roasted in the oven.

Kale chips are something I make a few times a week, but that’s more snacks.

I guess I like all vegetables. Fresh green beans, corn, fried breaded okra.

Lots of salads with mixed lettuces, spinach, arugula. Broccoli, steamed or stir-fried. Sauteed spinach, sugar snap peas, snow peas. Roasted asparagus. Lots of onions in cooking. Sometimes eggplant.

Well, none. Usually I am just too lazy to prepare anything, here is the thing - I HATE cooking. But I love potatoes and carrots (and garlic bread) and like onions, corn... not opposed to pepper and tomatoes, even broccoli if well-prepared. Won't go as far as removing the lettuce from a sandwich either. But I just don't go out of my way to prepare veggies, so I don't have any of it except when I eat out or am willing to season canned pea/beans/sliced veggies - both rare occurences.

All of this coupled with my malabsorption issues explain my lifelong health issues prob. My vit levels are between "scarily low" and "how are you still walking?" so I appreciate the thread because I need to change my eating habits (apparently rice, dairy, meat and sweets every day isn't enough) and could use ideas; thanks, anon!

Our tastes seem similar. I'm not very big on veg, but I genuinely like broccoli if not overcooked, an generally eat it with fish.

I also like peas, carrots, and sweetcorn.

Recently found out I also really like sweet potatoes. Also lentils and chickpeas. I also eat cauliflower (it's nice in batter or baked in with cheese) but I know opinions on it differ.

The main ones I get fresh are onion, mushrooms, potatoes, bell pepper, yam, corn, spinach, lettuce and leeks. I also like getting frozen veggie medleys to keep as quick side dishes/stir fry. We tend to only eat brussels sprouts for thanksgiving and christmas.
