I don't know why I didn't think of this before, but it just occurred to me that they're probably using the canon love interests as self inserts since they don't really have any characterization of their own in the canon so they can write them however they want. There are zero MC/reader fics in the fandom (which is a bit unusual when I think about it) so it makes sense.
