There are videos out there where booktubers explain how they annotate, but they all say it's just how they do it and pretty much everyone does it differently. I personally have done it on rereads of favorite books with lots of parts that I'd want to go back and reread again. Booktubers seem to look for certain types of things in books, and every time they find that thing in a book, they put a tab in it. For example, every time a theme of the book is discussed, put a specific color tab there.
