They do this so they don't have to pay benefits/royalties to the writers/producers. Capitalism ruins everything.

It's not *just* that. I mean, that is part of the reason that the model is appealing. But fundamentally making less product - fewer episodes, fewer seasons - basically means spending less money. And their business model is that they want to spend as little money as possible on product as they can get away with before people cancel, and it's also fundamentally less profitable than the business model of companies that aren't streaming-only.
