The ghosting and flaking behavior doesn't surprise me at all because all the interactions I've had with flakes IRL and in very different circumstances (in school, at work, in hobbies, etc.) have the exact same kind of behavior -- if someone didn't have their life/priorities/time management in a row so as to be able to hit the very clear, easy-to-plan-for deadline or face the music and admit it's not happening when the deadline rolls around, then "one more week, I promise!" is 100% inevitably only going to end in flaking. Long before I'd gotten into exchanges, I was very familiar with this aspect of human nature.

The not thanking people behavior, though, always does surprise me. In general, I'm very comfortable with and good at composing comments on random strangers' work in the wild and showing my appreciation for them writing something I'm interested in. I get not everyone is the same way and some people get anxiety around commenting and composing comments, especially in public. Fine. But maybe don't go out of your way to ask for gifts, if thanking people for making you a gift is something you find stressful??!
