I think it tends to work better if it was the intention from jump, like ASOIAF.

I struggle a bit more when it's been from one POV for a long time and then bam, suddenly we're now seeing the series from someone else's POV, like the Twilight series.

I think if you do it well and the payoff is exciting/interesting, like Gone Girl, then it's brilliant.
But more times than not, it's not that well executed.
