If the choice was between bringing back Tony Stark and letting the MCU die, I'd rather let it die.

Agreed. If Tony/RDJ came back that would probably be the moment that I tap out for good. He's already sucked up enough screen time to the detriment of everyone else, including himself, honestly.

But for some people, it did already die when they got rid of him(and Cap). So the choice would actually be between bringing back Tony or reviving the MCU. Which would basically be the same option to these specific people.

Yep, this. Bringing back Tony would be reviving the MCU for me. Bringing back Steve might also revive it, though I'm more skeptical that tptb would manage to actually write anything decent for Steve at this point, and imo Steve as a character is more reliant on a good script than Tony is.
