I haven't watched much of the shows but I agree about MCU's shallow writing problem being especially noticeable in the shows.

The actors do the heavy lifting in giving characters depth, hence it took a while for people to notice.

In terms of even, say, Odin's relationship with Thor and Loki, most of the depth and complexities comes from the first film and even then most of it came from the craft of the actors and Kenneth Branagh.
