See, I think you're hitting the nail on the head here-- the canon m/f ships that have the most love are ones that had amazing chemistry before they ever got together. So when it comes to non-canon m/m or f/f ships, people are looking for the actors who have chemistry and the characters who have watchable relationships... and that doesn't always line up with which characters are canonically queer! And with m/f ships, where even if that energy is accidental, showrunners often push that direction once they see the chemistry and the fan reactions, with gay ships we tend to not expect to see it go canon, we just want to play in the sandbox.
