Not OP but the way I understand target fixation in media and entertainment is that the writers/creators of the show are making it with the idea that their target audience is male aged 18-35 (or whatever) and, when they actually get an audience of 30-60 aged women, instead of redirecting their attention to focus on that demographic they try to change the media in an attempt to gain the audience they wanted. Thus having characters do and say things that aren't in-character, plots that don't make sense, retconing things that happened in earlier seasons, and generally ruining the show.

They're fixated on the demographic they wanted instead of the demographic they have.

Just dropping in to say that I really hate it when shows try to evict the audience they've got because they think some other audience is more profitable, or what they should be catering to. So, totally agree with you about this being a pain, anon.
