1 could be interpreted as an attraction kinda thing, yes, but 2? Sounds like something a friend might say jokingly as a praise.

Feelings for Dollie are pretty canon, but you do sound like "I don't believe in bis" .

Jean Armstrong was trying to turn Phoenix into a waitress and Phoenix was uncomfortable with the idea, to say that's flirting is farfetched at best. Not a lot of discomfort at Max either, his way of calling everyone a "sweetie" IS funny though (you wanna know who gay panics a lot more when they see pretty flamboyant people? Apollo Justice) .

Edgeworth's aversion is why I get your interpretation but I can see some people think it's defensiveness and "exactly why he should fall in love and marry!" which is a thing for some shippers. And it does happen sometimes both in fiction and RL anyways
