Yeah, going all unisex toilets and having communal sinks is truly more practical space wise. I do wish the US would embrace the European/UK stall design more often, though.

I don't want to use a bathroom stall next to a man that's going at the same time I'm going. And I have that right. I don't want unisex bathrooms with more than one stall.

With European style stalls (that have walls and doors that extend all the way to the floor), no one can see who is in the stalls. Lock indicators show if a stall is free or not. Likewise, depending on the setup, the stalls don't have to be in one room; the stalls can essentially be miniature rooms. Schell's Brewery in New Ulm, MN actually has that kind of concept, and it's great. I heard zero complaints about the setup when I was there a couple years ago.
