"They're people of color so more color = more poc = more correct"

It sounds completely stupid but that's probably what's going through their heads because they've never actually examined what makes a POC a POC deeper than extreme surface level "color"

A more charitable interpretation (and I admit that I am totally pasty and cannot speak to the experiences of POC here) is that given some infamous examples of media lightening up various real-world POC (the 2008 L'Oreal ads that appeared to make Beyonce paler and blonder than she was come to mind), well-meaning people are trying to compensate for that... and doing a bad job of it.
