It also has a lot of international fans. Depending on what the errors are, it could also be a matter of "things work different in the author's country" but they write in a US setting they don't know because of the bigger audience.

That could be it. It's stuff like how tipped waiters get paid or how grocery stores work in the middle of the night. This stuff might be specific to America.

Then there's stuff like the general approval of professors dating their own college students and how much college professors make. I don't know that those things are USA specific.

Yeah the first two definitely sound like a regional issue.
The college professor/student thing I'd see as just general fanfic shipping handwaviness and yeah, I'm pretty sure how much college professors make varies greatly not just from country to country but from college/uni to college/uni as well.
Which is not to say those AU author's might not be young as well. But what they definitely are is too lazy to do some rudimentary research. I'm not from the US but if I were to write fic set there I would research it - and it's not like it's in-depth stuff, a quick Google search already helps.

Oof I feel you. I mean I tend to avoid modern/mundane AUs for fantasy things because the setting is part of the appeal but sometimes there's a modern AU that sounds really promising! And my current and previous main fandoms had a LOT of otherwise really good fic that BADLY needed an american-picker.
