Veggie barley soup. 32 oz vegetable broth, chop 3 or 4 carrots, a few celery stalks, some spring onion, and a cup of barley. I sometimes add some fingerling potatoes but just didn’t have the energy tonight.

I have been having a weirdly hard time finding barley at the grocery stores. All I can find is the instant stuff, which just doesn't taste the same to me.

If you’re in America, check the baking section. I can only ever find Bob’s Red Mill and in almost every store within 45 minutes of me they have it within ten feet of the BRM flour. Some of my area’s chains have a designated spot just for Bob’s Red Mill products and some of the larger, swankier stores have a health foods section where I can always find almond flour, nutritional yeast, and barley.

I've seen barley at my local Indian grocery, so that might be worth a try. I want to say I've seen it at a local halal Middle Eastern grocery as well.
