They Literally Mean Different Things.

Bisexual and playersexual are literally not synonymous. They do not necessarily mean the same thing. It is fine to use them both to refer to what they mean. It is not the case that a video game NPC who is attracted to the player character regardless of gender is, therefore, bisexual. It just isn't.

I would personally like there to be more actual bisexual NPCs and love interests in games! But like, don't call people biphobic for this shit, Christ.

Yeah, it can be done in a biphobic or homophobic way (see: Stardew Valley where there are no non-player same-sex crushes or relationships at all unless the player initiates the hearts quest with Leah, who has an ex the same gender as the player) but bisexuality and player-sexual are not the same.

Except that in 99,9% of the cases, this term is used solely to deny the possibility of a character being bisexual exists. There are many actually playersexual characters out there, but they're basically never involved in the discussion as majority of them are straight. Meanwhile any hint of bisexuality is immediately blasted as playersexuality, even if the character in question can have a romance outside of the player character.

From my point of view, it's mostly used because people insist characters are Canon Bi when they are in fact not Canon Bi.
