ooooh - ok I see why people think I'm an idiot.

So fandoms like Star Trek and Les Miz have All media types. In my time on AO3, most of my multi-fandom fandoms have not had that listing - such as right now I'm in the Markiplier choose your own adventure series fandoms which has 4 fandoms and a lot of the earlier works fall under the Youtube RPF tag (even though those certain fics aren't technically RPF but are fictional characters connected to the youtuber); so there isn't an all media types tag for them (possibly because there's not enough fics? IDK what qualifies or if its down to the tagging wranglers).

I still would like to see a listing of all the crossovers for curiosity sake, but of course I do like that I can find specific crossovers if I ever think to look for them.

All Media Types is a thing when a property fits in more than one AO3 category for works and those pieces of media are different enough to have specific tags. Les Misérables is a book, musical, and movie. This means when you look at the All Media Types fandom tag, you'll get everything tagged for any of 'Les Misérables - All Media Types', 'Les Misérables - Victor Hugo', 'Les Misérables (2012)', Les Misérables - Schönberg/Boublil or any combination thereof. Some people choose just to tag All Media Types when their fic contains elements of more than one (or when it could fit in any of the types of media), rather than all the specific tags for the book, movie, or play. It's just a broader category. Some fandoms have it, but some fandoms have a different type of broad category (like Sherlock Holmes & Related Fandoms), and some don't need a broader category.
