I've never done the Grouse Grind but I've been meaning too for like a decade. If you're up for some physical exercise it seems like it could be a good choice. There's also Capilano Suspension Bridge and the surrounding park, which I've also never been to but which seems to be popular.
If you want to shop, Robson Street and Pacific Center Mall are the major downtown shopping centers (and they're very close together so you could easily hit both). Metrotown Mall is the largest mall. And if the weather's nice then there's the outlet mall, McArthur Glen, but I don't recommend it if it's cold and/or raining because it's an outdoor mall.
If you're looking to have lunch downtown and you like Japanese food, one place I really like is Shabusen. They do an AYCE lunch, which is a little bit pricy, but fun. Here's a link to the menu if it sounds like something you'd enjoy:
