Eeehhh, I think it's a bit tricky with games where the characters are playersexual. Not counting the characters who obviously express an attraction to opposite sex NPCs as well, you are, in fact, free to headcanon a romanceable character as whatever sexuality you choose in YOUR game. That doesn't mean you can dictate their sexualities in other people's games though. (Though if we're being pedantic, I'd say they're all pansexual, no bi but anyways.)

They make comments about the attractive of each other and also other npcs. They're bi. Or pan, if you prefer.

Meh. Not all of them do and just because you make a remark about someone's objective attractiveness doesn't mean you'd like to sleep with them.
