I'm having roast chicken and vegetables, even though it's hot and running the oven for a long time doesn't seem like a great idea. But I just really felt like some comfort food today. How about you?

Got mexican from the local place. Chicken fajitas with jalapenos. I'm mad because they gave me HALF the rice they usually do. And that is even less than they were giving last year. :/

Awww, that's too bad. And weird, because cutting down on rice seems like it wouldn't actually save a ton of money, given how relatively inexpensive rice is. I love rice and beans from Mexican restaurants, so I'd be disappointed to get a small portion.

Right? The rice has to be cheaper than all the chicken and such. And that isn't being reduced.

I noticed this with the local Japanese place that does takeout, lately. My donburi has been like 3/4 whatever meat I got, 1/4 rice. Rice hasn't been jacked up in price like everything else, that giant slab of pork had to cost way more, so why is my katsudon mostly not don?

Gonna make some homemade garlic bread (okay, garlic-ish bread, shallots are also involved) and bake some flatbread pizza and cook veggies. Possibly a salad if I'm feeling it.

I lamely ripped the idea off of something shared on the interwebs. I do love roasted shallots but never considered putting them on bread.

Homemade pizza - dough, cheese, and sausage from the Italian deli, my own sauce blend, some spices. It's almost finished baking and it smells like heaven.

I went and made a salad. It's boring and I wish I had ordered pizza, but here we are. I do feel good about using the lettuce before it went bad.

I had an amazing chickpea salad :) the original recipe called for red onion instead of white but I used what I had on hand. Oh and it included red bell peppers, which I hate, so I left them out.

1 16oz can of chickpeas
4-5 big spoonfuls of canned corn
a big handful of chopped spinach
About 1/4 of a white onion

In a small bowl, I mixed up some avocado oil with 4 drops of lemon juice, some salt, pepper, and garlic powder, then drizzled onto the salad. I sprinkled a bit of dried cilantro on top and called it done. It was soooo good!

I used to love Digiorno but they got so expensive! Now I eat Red Baron since they are under $5 still.
