I mean, they gotta create drama somewhere. If the contestants cook something that visibly looks good, then the only thing they can quibble over for the sake of generating drama has to be something the viewer can't experience. Kinda like how cops always start "smelling drugs/alcohol" on traffic stops as soon as they get fitted with cameras. Seasoning doesn't show up on camera, so they can say too much/too little as much as they want to stir up shit.
