Is this about Chilchuck being short?

If I had to guess, I'd say it's more about how the fandom can get really weird/infantilizing with the autistic-Laios headcanon? (But to your point, Chilchuck is my favorite character and I DEFINITELY think there's a portion of the fandom that fully buys into the "short adults are minor-coded!!!!1" mentality; the amount of times I've seen people call him a "legal shota" or whatever because he's short and babyfaced makes me want to walk into the ocean.)

I haven't watched the show yet, but one of my friends loves it and from what I hear, doesn't canon make the point that he's actually old and not a shota with a superficial high number for an age? Like he has the grumpy old man personality and has grandkids who we see and all that?

Not grandkids but he does have adult children, yep. We're even shown what he would look like as a human and in any other series his human self would be some bearded NPC rando. It's pretty awesome actually.

It's about Mithrun getting daily life assistance by Kabru for a while and some Labru shippers saying Mithrun is too disabled to be in a relationship.

Man, I also assumed it was about Laios and autism, Mithrun didn't even occur to me as a possibility. It's seems like a bad faith argument, too, with a character who literally doesn't do anything he doesn't feel like doing.

Anime-onlies haven't even gotten to Mithrun yet, right? Rest assured that'll change when the anime gets there. Like clockwork.

The main people who hate on the ship are people who are manga readers. We also don't know yet how many of the Kabumisu relevant scenes the anime will touch and even if it does, a lot of anime-onlies are already invested in Labru and thing can only get worse on the ship war front.
