I can enjoy a slow-burn if it's done well but honestly, I don't think most are done well. The story just shoves in contrived circumstances to keep them apart and at a certain point it really does beg the question as to whether these two characters are even compatible at all yanno?

Payoff is something that should happen and not just right at the end without any of the happy-ever-after because otherwise what was the point?

Yeah, this. You can only suspend disbelief for so long when it comes to why two characters who are obviously interested in and attracted to each other haven't just gone for it.
