Soups and stews

What are your favs? And do you also love dipping bread into the broth like an Orwellian orphan?

This beef and Guinness stew, as well as a regular winter beef casserole, are a favourite among me and my parents. It's quick, easy and deliciously full of flavor.

I've also taken to making her Chinese noodle soup when I'm not feeling well. I add a little sriracha to it tho.

The classic creamy tomato soup and grilled cheese, french onion and bread, potato leek... good stuff! I also love a nice hot and sour soup with plenty of pepper.

Minestrone. Butternut squash soup. French onion. Tomato bisque.

You're goddamn right I dip my goddamn bread.

Seconding French onion & tomato bisque. Also minestrone and sometimes broccoli cheddar.

Oh, and clam chowder. (But I'm a heretic as I like the stuff from Crab Cooker of Long Beach, CA... which is and always has been *red*.)

Love hamburger soup, chicken stew, and white chili. Which is totally a stew! The white chili is also super easy (and the only one I got a recipe for).

I love dipping bread in some. However, in chicken soup/stew I add so many saltine crackers, it becomes a non newtonian fluid. Lol. And in regular chili/hamburger stew, I usually add cornbread to it.

My grandmother used to make a type of vegetable soup with cream that's called Ängamat. (Transl. "Food of the meadow")
It's cauliflower, sweetpeas in the pod, carrots, scallions, potatoes (optional) and cream.
One version is here: http://annesfood.blogspot.com/2005/09/meadow-food-soup_22.html

I haven't had it in years, but I should really try to make it myself.

I live for soup, and I'm actually kind of glad the Instagram algorithm is showing me a bunch of soup posts right now. I tend to favor creamier soups, especially cream of broccoli. I enjoy creamy tomato soups.

That said, I tend to not like having bread with my soups. I just want to savor the soup itself.

I think it's a knock off of Olive Garden's zuppa toscana, but I wouldn't know because I've never had it. Note: this is much better with Italian sausage instead of breakfast sausage:

Broccoli cheddar, except I tend to add lots more green veggies including edamame for protein and a potato to thicken it, tamari and a parmesan rind for extra umami, a serrano or two for kick, and spinach right as it comes off the heat so it just wilts, and puree it so it's bright green.

This makes it sound healthy. But I add grated sharp white cheddar to my bowl in handfuls, plus, if I don't just dip toasted buttered sourdough in, I make homemade croutons.

Most of my soups sound super (souper?) healthy except they basically get crammed full of cheese, buttered bread, or both, unless there are dumplings instead.

Aside from broccoli cheddar, I make black bean veggie, gigante bean veggie, veggie dumpling (sometimes with fake chicken), leek and potato, and asparagus. I add dill to the leek and potato, lemon zest and a potato for thickener to the asparagus, and spinach to both.

The gigante bean usually has cauliflower and lots of tomato, the black bean usually has purple sweet potato and tomatoes and chipotle. Most of them start with mirepoix and lots of garlic and thyme, but there's usually also bell peppers because I like them.

Anyway. I am going to add some food diversity to this thread.
My to go soups are pho and solyanka. No, I am not eating bread with them. I only do dry bread with broth
