From what I've read, it's about the ritual of having a drink, and low/no alcohol options allow most of those rituals to stay in tact to some extent. And sometimes the flavors are definitely interesting. I had a low (hard) apple cider in Montreal, and honestly it tasted closer to a sour beer with apple notes. It was not what I expected...but also not that bad. I still feel reasonably relaxed after having it but woke up perfectly fine the next morning.

After a few years of not drinking at all I tried no-alcohol beer because it paired well with a specific meal, and I enjoyed it in that situation. I rarely do it but every now and again I have mocktails or very, very low alcohol beverages because I don't drink (as in, I choose to avoid getting drunk and don't drink normal alcoholic beverages due to family alcoholism, not that I have an allergy or religious reason to avoid all alcohol) but can enjoy the flavors and social connotations. They're just fun if you do happen to like the flavor but aren't into the effects of alcohol.
