I second the playlist, especially a themed playlist like those old ones we used to make for fandoms/ships/characters.

It depends on what they like, but maybe a moodboard with their interests? DW icons? A list of recs? A note saying nice things? If you have their adress, maybe a book or a funny postcard? It's the thought that counts, and you wanting to do something nice for them is lovely! <3
