I want to eat more vegetarian meals. What are some yall eat?

Soups are my go to during this season. Lentil, black bean, minestrone are some of my favorites. Easy to make a big batch and they freeze well!

Veggie enchiladas!

Roasted veggies seasoned with olive oil, vinegar, and whatever other spices you like are simple and delicious.

Lentil and bean heavy recipes are my go-to for vegetarian recipes. If you're fine with eggs, there's also nothing quite like fried eggs, a bit of rice, and chili crisp.

Vegetarian chili is tasty. the more bean varieties used, the tastier. And can be thrown in a pot or crock pot for easy cooking.

Eggplant fatteh/fattet is a favourite in my house

Roasted cubes of eggplant with creamy yogurt sauce, crispy pita chips, and a little fruity sweetness (pomegranate seeds, pomegranate molasses, dried currants, etc). People often add pine nuts or almond slivers.

I love the combination of flavors and it lasts in the refrigerator for days, as long as you only toss the components together just before serving.

I really love classic pesto. It gets much cheaper (and more delicious imo) if you substitute the pine nuts with ground almonds. But there are tons of pesto variations, you can try which ones you like.

Potato samosas are fun. They are good hot or cold. I like mine with Thai dipping sauce.
