Easy vegetarian meals

Soups are my go to during this season. Lentil, black bean, minestrone are some of my favorites. Easy to make a big batch and they freeze well!

Veggie enchiladas!

Roasted veggies seasoned with olive oil, vinegar, and whatever other spices you like are simple and delicious.

Lentil and bean heavy recipes are my go-to for vegetarian recipes. If you're fine with eggs, there's also nothing quite like fried eggs, a bit of rice, and chili crisp.

Vegetarian chili is tasty. the more bean varieties used, the tastier. And can be thrown in a pot or crock pot for easy cooking.

Eggplant fatteh/fattet is a favourite in my house

Roasted cubes of eggplant with creamy yogurt sauce, crispy pita chips, and a little fruity sweetness (pomegranate seeds, pomegranate molasses, dried currants, etc). People often add pine nuts or almond slivers.

I love the combination of flavors and it lasts in the refrigerator for days, as long as you only toss the components together just before serving.

I really love classic pesto. It gets much cheaper (and more delicious imo) if you substitute the pine nuts with ground almonds. But there are tons of pesto variations, you can try which ones you like.

Potato samosas are fun. They are good hot or cold. I like mine with Thai dipping sauce.

I love dark chocolate, marzipan, maple, caramel and coconut. I also love butterscotch but I don't know if that falls under the holiday category.

For Christmas? I like peppermint bark, and any holiday themed chocolates (like gingerbread). For some reason, Mozartkugeln seems to pop up more often around this time, so those too.

Oh, and any brandy or bourbon filled chocolates.

I have a nostalgic fondness for those minty nougat candies that are red and white stripped on the outside, with a shape of a Christmas tree on the inner core. No idea if they even exist anymore!

Lord of the Rings. Lion King. How To Train Your Dragon. Star Wars (especially OT, but most of them really).

There are lots I love, but those ones will always be the absolute top for me.

Healthy people

Why is it that some generally healthy people have such trouble understanding that things are just not that easy for people who have chronic health issues that interfere with their lives?

Mom and I cancelled thanksgiving plans. Neither of us is up to it. Especially worried about mom. Sister has decided to take it personally since she was coming to the family thanksgiving specifically to see us. I've run into this in the past with her where she just doesn't get that not everyone is physically capable of what she is. If she wants us to do something and I'm not up to it, she gets offended and thinks it is personal. Really frustrating.
