I used to make a potato casserole for breakfast.

Cut potatoes into small cubes, lightly oil them, flavor with salt and pepper and roast at 425 degrees F for 20 minutes. Turn into a lightly oiled 13x9 pan.
While the potatoes are roasting, crumble sausage into a skillet and cook until completely browned. Mix in with the potatoes in the 13x9 pan. Sprinkle cheese on top and bake for 10 minutes. Cut into portions and put into freezer. I microwave for 1 minutes, stir, and evaluate how much more time it needs (30 secs to 1.5 minutes) depending on the microwave. I’ll also add more cheese when it comes out of the microwave.

That’s the basic recipe. I like to cut up peppers and stir fry them, then add to the casserole. Sometimes we finely chop an onion and cook it with the sausage.
For those that so like eggs, you can fry or scramble eggs and serve on top of the casserole.

Welcome! I just like my potatoes cooked thoroughly, which they are often not if they’re added raw and baked. I also have texture issues with grated potatoes, hence the cubes.
