They do (stay with a dominant side), I can attest as my partner who sometimes has to help with snow just. Can't. No amount of trying has made them capable of switching like I can, and we talk about how much it would help with sciatica if they could. It only seems to work with large-scale simple movements, I can't even switch hands for sewing or chopping vegetables or anything fine.
