I guess largely handmade but some machinery is involved. Depends on the candy company.

Logan's Candies does a lot of handmade hard candy - lollipops, ribbon, cane (one of the guys puts on a "show" for guests and makes it entertaining). They use some machinery and candy presses for pillow candy.

Hercules Candies makes lots of creams, hard candy, and unusual types of candy bark. Machinery is used for cream mixing and chocolate coating. But one thing to really be commended is the camera work!

Rocks & Rolls Candy is mostly hard candy but you might see marshmallow or other things as well. Machinery is involved in kneading/mixing but they create the designs by hand and roll it themselves. I just love listening to the scissors cut through the cooling candy sheets. Netherlands based company.
