Depends highly on the game, imo. The assumption that someone will "miss" content if it's on Easy only works if the game in question has certain endings/scenes that you only get on harder difficulties. Because the argument "oh but they won't do the sidequests if they don't have to" is silly - there are also plenty of people who play on hard difficulties who ALSO don't do sidequests.
If it's for professional review purposes I actually think a game should be played on ALL difficulty setting at least in parts to give a well rounded review on how the power/damage/level scaling works and how much changes with changing the difficulty level. Because some games don't actually have good balancing in either directions and knowing that, to me, ist part of a review.
