I didn't know this was a common trope but wtf? Can't they just be reincarnated into a new body?

There was a popular Romeo and Juliet type folklore story from my parents' motherland where a pair of star crossed lovers jump off a cliff because their families forbade them to get married. They promised to find each other in the next life by placing moles/beauty marks on the right side of their necks.

Jumpcut to decades later where a girl is at a popular rest stop and she is by the river getting a drink of water. She notices a boy nearby and sees he has a mole on his neck in the same spot she has one.
She doesn't know what it means but she's drawn to the boy.
She finds out he already has a girlfriend but eventually they remember their past lives and get together at the end of the story.

Why do the xianxia stories need dead bodies??
