Genuinely asking, since I don't know anything about it: what are the differences between the releases?

I think you make a good point in your last paragraph. Tons of fans have multiple figurines of the same character, or have multiple shirts for the same show, or versions of the same book with different covers, etc. If the different releases have different promo material it's just triggering the same collector mindset that a lot of fandoms foster without getting grief from outsiders.

Not who you asked but as someone who has bought most of the variants:

The standard editions

Orange vinyl - basic standard, has all songs, no extras
Orange CD - basic standard, w/fold-out poster
Orange cassette - basic standard, just cassette (there are not usually different variants of the cassettes, just the one, for those who collect them)

The variant CDs

Orange ver - 'Sweat & Vanilla Perfume' edition - Special orange glitter box, unique to edition photocards, purple-eye keychain
Red ver - 'It's Frightening' edition - Different cover, Special red glitter box, unique to edition photocards, red-heart wood keychain
Purple ver - 'It's Rapturous' edition - Different cover, Special purple glitter box, unique to edition photocards, love letter envelope golden necklace

As a cd/vinyl collector, y'all have no idea how the word “photocard” bothers me. I know that Taylor doesn't abuse it the way that it’s done in K-pop, but the idea is just…yuck…

Although I do have two White Lotus shirts. One's a sweatshirt, though!

(WL fans, the Abercrombie collaboration is the BEST. This is the nicest fandom merch I have ever bought. Most HBO merch is garbage, but these are nice; embroidered text and logos, no "HBO" visible branding there to ruin it.

They fucked up Succession merch so badly. They are not serious people.

I was a collector until a few years ago. I collected games, action figures, keychains, doujinshi and manga. Then I went to therapy.
It's not the same for anyone, obviously, but in my case I was collecting fandom merch (and not that much either) because I was trying to fit into the role I projected onto myself. Like, I'm a fan of X so I have to have X to "be happy". Now that my ego is stronger and I don't depend on external factor that much to determine myself (objects or other people's opinion of me) I let go of A LOT of "identities" and stuff tied to them.

Absolutely. That's what my overconsumption and shopping addiction problem is from. I am trying to fix something with stuff, and it doesn't work. But it feels good in the moment, so I keep doing it.
