Have you tried Shadowhunters (TV show or books though afaik the fandom is mostly show focused)? Tonally it's very different from the Witcher, it seems to hit everything you describe about liking in a fandom though, especially with the loose world building that fic writers then get to play around in.

And obviously the big cheese: Harry Potter.
