I've tried to watch this movie so many times and never make it more than 30 minutes in because I get so bored.

I know it can be hard to put your finger on what’s wrong when you’re reaction is just “bored”, but do you have a sense of what you were missing in terms of plot or characters? Is it a genre you usually like?

Yeah, I like fantasy, I like humor, I like subverting genre/expectation. I've wracked my brains to figure out what it is about the movie that I can't glom on to because this movie should be right up my alley but I've yet to put my finger on it.

I feel that way about Paddington 2. People keep telling me it is a cinematic masterpiece but I've tried watching it a few times and get bored and check out around the same point each time.

Same. I can’t put my finger on the reason why, it should be my favorite movie based on everything else I like.
